Paratha (Indian Flatbread) made from Leftover Chapatis and Dry Vegetable Curry

This paratha is a quick version made from leftover or ready-made chapatties. I often use wheat flour Tortillas, in place of chapatties.

I have given a recipe for making the potato filling here, but you can use any leftover vegetable sabji/bhaji of choice, even keema/queema (mince curry). It just needs to be without any liquid/sauce/gravy. ANY liquid at all and any excessive oil must be drained off. The number of parathas you make depends upon how many chapatties/tortilla you have and how much filling you have leftover.

Ingredients

  • For the filling, you can use any leftover bhajies/sabjies/keema/spicy scrambled eggs. Potato Bhaji/Sabji For Train Journeys and Picnics is my favourite and great!
  • A bunch of coriander leaves, finely chopped
  • Extra chilli powder/salt/chopped green chillies
  • For the Parathas:
  • 20-24 ready-made or leftover or pre-cooked chapatties. You can use Tortillas too. Corn tortillas are especially nice.
  • Oil for pan frying

Instructions

  1. Making the filling:
  2. Make sure there is no liquid in your chosen filling. If there is even a slight liquid in your filling, stir-fry it to dry it out. Otherwise it will make your parathas soggy and difficult to handle.
  3. Add coriander leaves and any extra salt/chillies required.
  4. Allow to cool completely and Keep aside.
  5. Making the stuffed Paratha:
  6. Place one chapatti or tortilla on a flat surface.
  7. Spoon 1 to 1 1/2 tbsp. of the filling on top and spread it out evenly.
  8. Place the second chapatti/tortilla on top.
  9. Press with a rolling pin gently, flattening and spreading the filling out evenly between the two chapatties.
  10. Lift and place it carefully on to a hot griddle, taking care to not allow the filling to spill out.
  11. Brush top with oil, using a ladle dipped in oil.
  12. Turn over very gently with a spatula, avoiding any filling slipping out.
  13. Repeat oiling the surface.
  14. Fry until crisp on both sides. Note that if you are using tortillas, they will turn brown very fast, so keep the heat on the low side.
  15. Once done, lift and place on a flat surface and cut into triangles using a Pizza cutter.
  16. Serve hot, with pickles of choice and cold Lassi 1, A Sweet Yoghurt drink .
