Oven or Air-Fryer Roasted Tomatoes

Easy Free From Ginger Free From Onion Main Side Starter Vegan Vegetarian

These are very simple to make and are quite delicious. You can serve them as a side dish to an Indian or Non-Indian meal, on a toast or or as a sandwich filling. The pictures here show it being cooked in an air-fryer. The onion roasting on the side for something else.

Serves 4

Ingredients

  • 4 ripe tomatoes of good flavour
  • 1 tsp. chives/oregano/basil or other herb of choice. Fresh is better
  • 2 cloves garlic, crushed (optional)
  • 1 green chilli, thinly sliced
  • 2 tbsp. Olive Oil. I often use a spray bottle.
  • Salt and freshly ground black pepper

Instructions

  1. Cooking in an oven:
  2. Preheat oven to 200˚C 400˚F or Gas Mark 5-6.
  3. Make a cross cut at the top of each tomato. Place cut side up in an oven-proof dish or tray.
  4. Sprinkle oregano, garlic, green chilli and salt and pepper on top
  5. Drizzle/spray with olive or other oil of choice.
  6. Bake in the centre of a hot oven for 20 minutes or until the tomatoes halve softened and tops look slightly browned.
  7. Cooking in an air-fryer:
  8. Place prepared tomatoes on a foil or baking sheet in the air-fryer.
  9. Cook for 4 minutes.
  10. Check, cook for a further 3-4 minutes, as needed.
  11. Serve hot.
  12. To use as sandwich filling, cook for a further 2-3 minutes, until they collapse and can be flattened easily.

Notes

  • If you do not have an oven, cook them in a nonstick pan, cut side down.
