Mint, Cucumber and Roasted Red Pepper Raita

I made this one by accident one evening. I was looking for another ingredient to add to yoghurt as I had made my mint & cucumber raita. Searching the fridge for inspiration, I found a part used jar of ready skinned roast red peppers (from LIDL).

The result was really good. It went down very well with the fellow curry diners that evening.

Ingredients

  • 2 cup of thick, natural yoghurt
  • 1/4 Jar or 1-2 of skinned, ready roasted red peppers in olive oil, drained
  • Salt to taste
  • 1/2 tsp. ground cumin, to taste
  • 1/2 cucumber, peeled and grated or finely chopped
  • A handful of mint leaves, finely chopped

Instructions

  1. Place everything in a bowl and mix.
  2. Garnish with a few mint leaves and sprinkle of roast cumin.
