Microwave Banana, Walnut and Mixed Fruit Cake
This cake is cooked in a microwave, so suits those of you who do not have a conventional oven or are in a hurry. I don't use icing, too much sugar for me, but icing suggestion is given here.
This recipe has been modified/adapted from a couple of recipes on the internet and I have added some mixed fruit, just because I happened to have some in the cupboard.
Makes 8-10 squares.
Ingredients
- 2 standard sized, over ripe bananas (approximately 250 gm.)
- 90 ml cooking oil or softened butter (soften in a microwave bowl for 1 minute on full heat)
- 90 gm. soft brown sugar or caster sugar or Shakkar
- 1 large egg at room temperature
- 125 gm. self-raising flour
- 50 walnut halves, coarsely chopped (use a chopper or chop with a large sharp knife on a chopping board)
- 50 gm. mixed fruit or raisins*
- 3-4 tbsp. milk, if needed
- *Mix fruit is a ready-made mix of sultanas, currants, raisins, orange and lemon peel , glacé cherries, dried apricots and other fruits.
- Icing
- 100 gm. icing sugar
- 2 tbsp. lemon juice, freshly squeezed
- 50 gm. walnuts, finely chopped
Instructions
- Line a microwave suitable baking dish with a grease proof paper or silicone baking sheet (makes it easier to get the out later).
- Mash up the banana and keep aside.
- Mix 1 tbsp. flour (from measured amount) to mixed fruit/sultanas, keep aside.
- Place softened butter and sugar in a bowl and beat until creamy.
- Add the egg and beat again until smooth.
- Stir in mashed bananas.
- Sift in the flour and fold gently with figure of 8 motion of a spatula. If it is too stiff, add a little milk at a time until you have a 'dropping' consistency. I don't usually need to add the milk.
- Add and fold-in the mixed fruit and walnuts.
- Transfer to a lined baking dish and cook on full power (mine is 800) for 5 +2 +2 minutes, more if required. Test it by inserting a skewer or a pointed knife after each break, it will come out clean and cake will feel spongy when ready.
- Rest for 2-3 minutes, turn it out on a wire rack and peel off the paper. Allow to cool. Cut into squares and store in an airtight box when completely cool.
- Icing; place icing sugar and lemon juice in a microwave-safe bowl. Stir the juice in.
- Heat on full power 40 seconds. Pour icing over the cooled cake. Sprinkle the chopped walnuts while still wet. Allow to cool completely before slicing.
