Guacamole is a mix of mashed avocados, chopped onion, tomatoes, chilli peppers and seasoning of choice. Here, it is made with a slightly Indian twist to its flavours. Enjoy!

How to stop avocado from discolouring: 1. Adding lime/lemon juice, which are strong antioxidants, will reduce/slow down the browning process. 2. When you chop, slice or mash a ripe avocado, leave the stone in it. This stops it from discolouration. 3. Brush/cover the top with a thin layer of olive oil. 4. Cover with a cling film, pressing it into the avocado, so it stops contact between the flesh and oxygen, thus stopping oxidation process.

How to choose best Avocado: 1. They should look healthy. 2 When squeezed, the avocado should 'give' to gentle pressure, but should not feel soft or mushy. If too hard, it will take a few days to ripen. 3. When buying for the whole week, choose avocado with differing ripening stage, so you can use some on the day and others in a few of days over the week.

Serves 2-4

Ingredients

  • 1 ripe Hass avocado (slightly soft when pressed gently)
  • 1 tbsp. small red onion, peeled and finely chopped
  • 1 medium tomato, de-seeded and finely chopped
  • 1 clove garlic, peeled and grated
  • 1/2 fresh green/red chilli, finely chopped (de-seed if you want to reduce heat)
  • 1 tsp. lime juice (use lemon, if you don't have lime, or use bottled lemon juice)
  • 1 tsp. salt, black salt/Indian rock salt is good
  • 1/2. tsp. roasted and coarsely ground cumin seeds
  • A dash of hot pepper/chilli sauce
  • 1 tbsp. fresh coriander leaves, finely chopped

Instructions

  1. Cut avocado in quarters.
  2. Remove stone. If avocado is ripe, it should just slide out with a spoon. and scoop out flesh into a bowl. Chop/mash it a little, not a smooth paste. Don't throw away the stone.
  3. Place all chopped ingredients in a bowl and mix gently.
  4. Add the stone to the bowl, it stop the avocado from discolouring.
  5. Taste and adjust seasoning.
  6. Serve with tortilla chips, nachos or as part of Mexican meal.
