Cucumber, Onion and Tomato Raita (Yoghurt)

This is another popular raita often served in Indian restaurants in Uk, perhaps because it is so easy to make. Proportions of all vegetables are approximate.

Ingredients

  • 2 cups, thick natural yoghurt (or sour cream)
  • 1 small red onion, finely chopped or sliced
  • 1 medium tomato - seeds removed and finely chopped
  • 1/2 cup cucumber (kheera or kakri), finely chopped
  • 1-2 green chillies, finely chopped (optional, but they are nice)
  • 1 tbsp. chopped coriander leaves and/or chopped mint leaves
  • Salt to taste
  • 1/2 tsp. coarsely ground roast cumin seeds (or freshly ground black pepper)
  • 1/4 tsp. coarsely ground roast cumin seeds for garnish
  • 1 carrot, peeled and finely cubed (optional)
  • Optional garnish:
  • 1/2 red chilli, chopped
  • sprig of mint leaves

Instructions

  1. To make, mix all ingredients together in a large bowl and transfer to a serving bowl.
  2. Garnish with a sprinkle of roast cumin and chopped red chilli and mint/coriander leaves.
  3. Serve chilled.
