Carrot Raita (Yoghurt)

Easy Free From Garlic Free From Ginger Free From Onion Free From Tomato Indian Main Side Vegetarian

This is a slightly sweet raita (carrots are sweet) and very easy to make.

Serves 4-6

Ingredients

  • 2 cups natural yoghurt or dahi
  • 1 cup grated carrots
  • 1 green chilli-finely chopped (optional)
  • A few fresh mint leaves, chopped (optional)
  • 1/2 tsp. salt, adjust to taste (black rock salt is good, buy from Indian grocers)
  • 1/2 tsp. freshly ground black pepper
  • 1/2 tsp. coarsely ground, roast cumin seeds (dry roast in microwave or in a wok or frying pan)

Instructions

  1. Place carrots in a pan of 2 cups of boiling water, simmer for 3-4 minutes.
  2. Drain and allow to cool. Squeeze excess water out.
  3. Beat yoghurt, salt, black pepper and roast cumin together.
  4. Add carrots and green chillies and mix well. Adjust salt to taste.
  5. Serve chilled.

Notes

  • You can add coriander leaves to change the flavour.
  • You can also add a few raisins/walnuts/unsalted roast peanuts.
