Carrot Raita (Yoghurt)
Gajar ka Raita
This is a slightly sweet raita (carrots are sweet) and very easy to make.
Serves 4-6
Ingredients
- 2 cups natural yoghurt or dahi
- 1 cup grated carrots
- 1 green chilli-finely chopped (optional)
- A few fresh mint leaves, chopped (optional)
- 1/2 tsp. salt, adjust to taste (black rock salt is good, buy from Indian grocers)
- 1/2 tsp. freshly ground black pepper
- 1/2 tsp. coarsely ground, roast cumin seeds (dry roast in microwave or in a wok or frying pan)
Instructions
- Place carrots in a pan of 2 cups of boiling water, simmer for 3-4 minutes.
- Drain and allow to cool. Squeeze excess water out.
- Beat yoghurt, salt, black pepper and roast cumin together.
- Add carrots and green chillies and mix well. Adjust salt to taste.
- Serve chilled.
Notes
- You can add coriander leaves to change the flavour.
- You can also add a few raisins/walnuts/unsalted roast peanuts.
