This is one of those easy desserts that almost everyone has had but never makes at home. There are many versions, mostly using uncooked bananas. I personally prefer this one, it is rather nice to have caramelized bananas, but you can use uncooked, ripe bananas.

Serves 4

Ingredients

  • 4 ripe, but not over-ripe, bananas
  • 2 tbsp. butter
  • 5-6 tbsp. brown sugar (use any type you like or have)
  • 1/2 tsp. vanilla extract
  • 1/4 cup water
  • 1/2 cup toasted almond flakes or chopped pecan or walnuts (optional, but nice)
  • Good quality Vanilla ice cream

Instructions

  1. Making the syrup
  2. Heat butter, sugar, vanilla extract and water in a deep frying pan, cook on high until sugar is dissolved and the syrup looks of pouring consistency and lightly brown.
  3. Meanwhile, peel bananas. If large, cut into 2-3 pieces on a slant. Keep small ones whole.
  4. Add to the syrup in the pan. Cook turning gently, until bananas are heated through and totally coated in syrup, roughly 1 1/2-2 minutes on high heat. They should look lightly browned. Try not to overcook them, they are ripe after all! Turn heat off.
  5. Place 1 whole banana or equivalent pieces in each plate.
  6. Serve 1-2 scoops of ice-cream on top
  7. Sprinkle warmed brown sugar syrup from the pan in which you cooked bananas, over the top of bananas and ice-cream.
  8. Sprinkle nuts and serve immediately.
  9. You can spoon chocolate sauce on top of each serving, in place of syrup. But I prefer syrup.
