Avocado Fan Salad
Note from Mamta: This simple avocado fan salad recipe comes from a camp we stayed at in Tarangire National park in Tanzania, in the summer of 2011. We stayed at this camp three nights and food was always great.
Serves 2
Ingredients
- 1 ripe avocado. The right avocado should just ‘give’ when pressed, but not be mushy. Otherwise it will not hold it’s shape
- 3-4 tender lettuce leaves
- A few slices of red onion
- A couple of slices of cucumber
- 1-2 cherry tomatoes or slices of tomatoes
- 2-3 tbsp. vinaigrette of choice, like Vinaigrette with Red Wine Vinegar
Instructions
- Hold the avocado in one hand. Using a sharp knife, cut in half lengthwise all around.
- Gently twist the each half in opposite direction. One half will come off, leaving the other half with the stone.
- Ease off the stone with a knife or your fingers.
- Peel the skin off, starting from the pointy end.
- If there are any brown membranes left from the stone, gently scrape off with a plastic spoon. Lay the Avocado down on a chopping board hollow side down.
- Slice the avocado 3/4 of the way up in even slices of about 1/4" thickness, leaving about 1 inch at the stem end uncut. Then gently fan out the slices.
- If not using straight away, sprinkle some lemon juice, cover with a cling film and keep in the fridge. When ready to serve, lightly season with salt and olive oil.
- To serve; place a couple of leaves of lettuce on a plate. Arrange avocado fan next/over them. Spoon a little of the vinaigrette on top and serve immediately.
- You could add a couple of cherry tomatoes or other salad vegetables as well.
