Avocado, Cucumber, Onion, Radish and Tomato Salad
All amounts are approximate, depending upon what you have at the time. Serves 2

Ingredients
- A couple of fresh lettuce leaves of any type
- 1 medium tomatoes or couple of cherry tomatoes, chopped or sliced (de-seeding is your personal choice)
- 1 avocados, peeled and cut up into small pieces evenly
- A handful or 1/2 cup of cucumber, peeled and chopped
- 1-2 red radishes, chopped
- 2 tbsp. red onion, peeled and chopped
- 1 green chilli, finely chopped
- Dressing - or you can use a ready-made vinaigrette
- 1 tbsp. red wine or other vinegar of good quality
- 1 tbsp. extra-virgin olive oil
- 1/4 tsp. coarsely ground black pepper
- 1 tbsp. chopped coriander or mint leaves
- Sea salt to taste
Instructions
- Arrange a slice of lettuce leaf on a serving plate.
- Mix all the dressing ingredients in a jar.
- Fold in all salad ingredients, except lettuce leaves
- Pour the dressing over just before serving and gently fold it in.
- Serve piled on top of the lettuce leaves.
