Avocado, Cucumber and Kiwi Fruit Salad

I often add various chopped fruits or berries to my lunch time salad. This is a nice, sweet and savoury salad, one of my favourites, where all the ingredients are green in colour. Green apples, guavas or grapes will also be a nice additions. You can serve it on a bed of lettuce leaves.

Serves 2

Ingredients

  • 1 ripe avocado (not too soft though), peeled and chopped to your liking
  • 1 kiwi fruit, peeled and chopped to your liking
  • 1/2 of a cucumber (whole of Indian cucumber), peeled cut into fingers
  • Any vinaigrette dressing of choice. A simple mix of salt, pepper and lime juice is very good.

Instructions

  1. Place everything together in a bowl, pour the dressing over just before serving, mix gently and serve with fresh bread and a selection of cheeses
