Spicy Asparagus Stir Fry
Shatawar ki Bhaji
This is a simple way of making asparagus a little different from the usual, steamed version. Do not add too many spices or overcook, or you will lose the delicate flavour. You can stir-fry many other vegetables this way.

Ingredients
- 10 asparagus tips, 5/6 per person
- 1/2 red onion, thinly sliced (optional)
- 1 tbsp. oil
- 1/2 tsp. cumin or mustard seeds
- 1 whole chilli (for flavour)
- 1/4 tsp. chilli powder or flaked chillies, adjust to taste
- 1/4 tsp. salt
Instructions
- Wash and drain asparagus.
- Heat oil in a pan and add cumin/mustard seeds.
- When seeds splutter, add whole chilli and chilli powder. Stir for a few seconds and quickly add asparagus. Chilli burns quickly, so be quick.
- Add salt, stir for a few seconds, turn heat down and cook covered for 3-4 minutes. They should not lose their crunchiness.
- Serve hot with any grilled meat/fish/chicken dish and a salad (see A Collection of Salad Recipes), or on top of a Naan 1, Leavened Indian Flat Bread With Yeast, Traditional Method, Pitta Bread or toast.
