Spicy Asparagus Stir Fry

This is a simple way of making asparagus a little different from the usual, steamed version. Do not add too many spices or overcook, or you will lose the delicate flavour. You can stir-fry many other vegetables this way.

Serves 2

Ingredients

  • 10 asparagus tips, 5/6 per person
  • 1/2 red onion, thinly sliced (optional)
  • 1 tbsp. oil
  • 1/2 tsp. cumin or mustard seeds
  • 1 whole chilli (for flavour)
  • 1/4 tsp. chilli powder or flaked chillies, adjust to taste
  • 1/4 tsp. salt

Instructions

  1. Wash and drain asparagus.
  2. Heat oil in a pan and add cumin/mustard seeds.
  3. When seeds splutter, add whole chilli and chilli powder. Stir for a few seconds and quickly add asparagus. Chilli burns quickly, so be quick.
  4. Add salt, stir for a few seconds, turn heat down and cook covered for 3-4 minutes. They should not lose their crunchiness.
  5. Serve hot with any grilled meat/fish/chicken dish and a salad (see A Collection of Salad Recipes), or on top of a Naan 1, Leavened Indian Flat Bread With Yeast, Traditional Method, Pitta Bread or toast.
