Apple and Plum Crumble
Apple and Plum Crumble
Addition of other fruits like plums, make this dish taste great. Mix and match different fruits.
Serves 6-8
Ingredients
- For the fruit mix
- 3 large Granny Smith (cooking) apples or any apples that are tart, will do. Windfall apples are also great.
- 400 gm. approximately Plum. You can use a packet of frozen Plum, as I have here
- Juice of 1/2 a lemon
- 1/2 tsp. mixed spice or cinnamon and nutmeg
- 2 tablespoons light/dark brown sugar or grated jaggery (gur)
- For the crumble
- 400 gm. plain white flour or maida
- 125 gm. unsalted butter, cut into small pieces, at room temperature
- 3-4 tbsp. light brown sugar, adjust to taste.
- To serve
- Custard or vanilla ice-cream or double (heavy) cream for serving
Instructions
- Peel core and chop apple into 1-2 inch pieces. Sprinkle lemon juice on it to stop discolouration.
- Cook apples with 2 tablespoons of water, until soft, but not mashed. These days, I steam them in a microwave oven with 1 tablespoon of water, for 3-4 minutes.
- Blanch plums in hot water, remove and discard skin and stones.
- Drain and keep the juice in a bowl.
- Mix cooked apple with plums, sugar and mixed spice. Taste and add more, if needed.
- Spread at the base of a 12 inch x 8 inch ovenproof pie dish. You can use a round dish. Keep aside.
- Turn oven on to 375°F, 180°C (10°C less in fan oven), Gas mark 4-5.
- Making the crumble mix and cooking
- Place flour and butter in a bowl and rub with your fingers, until the mixture looks like bread crumbs. You can do this quickly in a food processor.
- Add brown sugar. Mix well using your fingers.
- Spread evenly and lightly on top of the apple and berries mixture, covering completely.
- Bake for 30-35 minutes, until the topping looks golden brown and the fruit bubbles through in a few places.
- Serve with fresh custard or double cream or vanilla ice-cream.
- You can use ready-made crumble mix.
- For making a pie, you can cook it with short crust or puff pastry, in place of crumble.
