Steve's Apple and Onion Chutney
Steve ki Sev aur Pyaz Chutney
Every year the same tree produces apples which normally drop to the floor and are wasted... Well not this time! Pictures are with my mobile phone camera, not my proper camera, hence the slightly hazy quality! Makes 1 tub.
Ingredients
- 500 gm. Apples (peeled and chopped)
- 500 gm. onions (chopped)
- 20 ml. olive oil for cooking
- 250 ml. white wine vinegar (or better still cider vinegar)
- 150 gm. castor sugar
- 1-2 tsp. chilli flakes
- 1 tsp. sea salt
- 1 tsp. black pepper
- 1 tsp. smoked paprika
- 1 tsp. powdered fenugreek (seed)
- 2 cloves of garlic (chopped)
- 1 handful fresh coriander (chopped)
Instructions
- Soften and gently brown the onions in the olive oil.
- Add the garlic, fenugreek, salt, pepper, chilli flakes, smoked paprika and cook in for a minute.
- Add the vinegar, sugar, apples and corriander then mix together and simmer for 1-1/2 hours
- Allow to cool then store either in sealed tubs or sterlized jars (like jam making).
Notes
- Works very well on cheese sandwiches!
