Devi's Apple Chutney
Sev ki Chutney
This easy recipe comes from my friend Devi. It is easy to make and quite tasty. Once made, store in a fridge, where it will last for at least a couple of months.
Makes one average jam jar full.
Ingredients
- 2 cooking apples (not eating apples)
- 1 tbsp. Cooking oil
- A 2-3 inch piece of cassia/cinnamon bark
- 3-4 whole cloves
- 1 tbsp. salt, adjust to taste
- 2 tbsp. sugar, adjust to taste
- 1 tsp. chilli powder, adjust to taste
Instructions
- Wash, peel and coarsely grate apples. They should not be grated fine, otherwise you will end up with a mush!
- As you grate apples, keep putting them in a bowl in layers, sprinkling salt on each layer.
- Heat oil in a pan. Add cumin seeds, cinnamon and cloves.
- As soon as cumin seeds crackle, add the grated apple and cook for a few minutes, stirring gently a few tomes.
- Add and stir in sugar. Turn the heat off.
- Taste and adjust seasoning and sugar.
- When cool, add and mix chilli powder.
- Store in jars in a fridge.
- This chutney is not suitable for keeping in a cupboard.
