This easy recipe comes from my friend Devi. It is easy to make and quite tasty. Once made, store in a fridge, where it will last for at least a couple of months.

Makes one average jam jar full.

Ingredients

  • 2 cooking apples (not eating apples)
  • 1 tbsp. Cooking oil
  • A 2-3 inch piece of cassia/cinnamon bark
  • 3-4 whole cloves
  • 1 tbsp. salt, adjust to taste
  • 2 tbsp. sugar, adjust to taste
  • 1 tsp. chilli powder, adjust to taste

Instructions

  1. Wash, peel and coarsely grate apples. They should not be grated fine, otherwise you will end up with a mush!
  2. As you grate apples, keep putting them in a bowl in layers, sprinkling salt on each layer.
  3. Heat oil in a pan. Add cumin seeds, cinnamon and cloves.
  4. As soon as cumin seeds crackle, add the grated apple and cook for a few minutes, stirring gently a few tomes.
  5. Add and stir in sugar. Turn the heat off.
  6. Taste and adjust seasoning and sugar.
  7. When cool, add and mix chilli powder.
  8. Store in jars in a fridge.
  9. This chutney is not suitable for keeping in a cupboard.
