Almond, Pistachio And Saffron Milk Shake

This is a cool drink from North India. It is popular during the summer months. It is good as a substitute to breakfast. Use sweetener for diabetics.
Serves 4
Ingredients
- 1 glass, 250 ml milk. Use skimmed milk, if you want to reduce fat content. Use vegan milk, if you are vegan.
- 2 tbsp. honey or sugar (use sweetener for diabetics)
- 2 tbsp. almonds
- 1 tbsp. pistachios
- 1/2 tsp. green cardamom or illaichi powder
- 1/2 tsp. rose water,a available from Indian store or supermarket. If using rose essence concentrate, use only a few drops.
- A few strands of saffron
- A few fresh rose petals, if available. These are wild rose petals, insecticide free.
- Few ice cubes, if desired
Instructions
- Soak almonds and pistachios in hot water for a couple of hours or heat in a microwave for a couple of minutes.
- Allow to cool and peel.
- Place all ingredients, except ice, in a blender and blend until smooth. It takes a couple of minutes to blend these nuts to paste.
- Place a couple of ice-cubes in each glass and pour the milk shake over.
- Garnish with a few strands of saffron, and rose petals, if you have any.
- Serve immediately.
Notes
- It can be made in advance and kept in the fridge. Don't add ice and rose petal garnish until just before serving.
