Almond, Pistachio And Saffron Milk Shake

This is a cool drink from North India. It is popular during the summer months. It is good as a substitute to breakfast. Use sweetener for diabetics.

Serves 4

Ingredients

  • 1 glass, 250 ml milk. Use skimmed milk, if you want to reduce fat content. Use vegan milk, if you are vegan.
  • 2 tbsp. honey or sugar (use sweetener for diabetics)
  • 2 tbsp. almonds
  • 1 tbsp. pistachios
  • 1/2 tsp. green cardamom or illaichi powder
  • 1/2 tsp. rose water,a available from Indian store or supermarket. If using rose essence concentrate, use only a few drops.
  • A few strands of saffron
  • A few fresh rose petals, if available. These are wild rose petals, insecticide free.
  • Few ice cubes, if desired

Instructions

  1. Soak almonds and pistachios in hot water for a couple of hours or heat in a microwave for a couple of minutes.
  2. Allow to cool and peel.
  3. Place all ingredients, except ice, in a blender and blend until smooth. It takes a couple of minutes to blend these nuts to paste.
  4. Place a couple of ice-cubes in each glass and pour the milk shake over.
  5. Garnish with a few strands of saffron, and rose petals, if you have any.
  6. Serve immediately.

Notes

  • It can be made in advance and kept in the fridge. Don't add ice and rose petal garnish until just before serving.
