Air Fryer Aubergine Mash
Air Fryer Baingan Bhurta
Baingan Bhurta, as the aubergine mash is known in India, is a popular north Indian dish, the reason I have so many recipes for it. You can make in may different ways, all tasting delicious.This one make use of an air fryer. Once you have gathered all the ingredients, it can cook in the air fryer in the background, without the need to stir frequently, while you are doing other jobs in the kitchen.
Serves 4-6
Ingredients
- 2 large aubergines
- 2 medium onions
- 1 tsp. grated or finely chopped ginger
- 2 medium tomatoes, finely chopped, or 200 gm. of tinned tomatoes 1 tsp. chopped or grated ginger
- 2 cloves garlic (optional)
- 1-2 green/fresh red chillies, chopped
- 2 tbsp. cooking oil, Olive oil is good for this. Butter also gives a lovely flavour and taste.
- 1 tsp. ground cumin seeds
- 2 tsp. salt (to taste)
- 1/2 tsp. chilli powder, adjust/omit to taste
- 1 level tsp. paprika powder for colour (optional)
- 1 tsp. coriander powder
- 1 tsp. Garam Masala
- 1 tbsp. chopped coriander leaves, optional ( I usually don’t, because half my family don’t like it.
Instructions
- Stab aubergines a couple of time to stop them bursting during cooking.
- Rub oil on aubergines. This gives the aubergines a Smokey flavour.
- Cook in the air fryer for 4-5 minutes. Turnover and cook for a further 4 minutes. They should look wrinkled and feel soft to touch from all sides.
- Allow to cool a little and then peel the skin off. Discard skin.
- Place the pulp in a bowl and break it with your fingers or a potato masher. It should have a rough texture. Do not put in food processor, as this makes it too smooth.
- Peel and chop onion, ginger and garlic finely by hand or in a food processor.
- Chop tomato finely, unless using tinned one.
- Slice green/red chilli thinly.
- Clean, wash and chop coriander leaves coarsely. Keep aside.
- Place mashed aubergines, tomatoes, green chillies, salt, spices and half of the oil/butter in a bowl and mix. Keep aside.
- Place onion, ginger, garlic and rest of the butter/oil in the air fryer pan. Cook for 4-5 minutes. Open and stir. If onions need a little more time to fry, air-fry for another 3-4 minutes.
- Add the mashed aubergines, tomatoes and spices mix to the onions and mix with a non-stick spatula.
- Air fry for 4 minutes. Stir and air fry for another 3-4 minutes.
- Adjust seasoning and mix half the chopped coriander leaves, if using.
- Transfer to a serving bowl.
- Garnish with remaining coriander leaves just before serving.
- Serve hot as part of an Indian meal or with freshly made Chapatti or Roti or Phulka 1, Indian Flat Bread or Paratha, Plain.
