Mamta's Kitchen Aprons Available Again

Indian spices in your kitchen cupboard:

When it comes to Indian cooking, people often get very flustered about having to have a lot of spices. That isn't really true. If you look at a lot of recipes for 'curries', they use 5 basic spices, plus a couple more, if you have space in your cupboard.

  1. Seeds; any one of these seed are used for tempering in hot oil of choice/ghee; cumin/mustard seed/nigella seeds/fenugreek/panchpooran (a mix of 5)/carom seeds/fennel seeds

  1. Turmeric, ground powder or fresh root, both giving different flavours.

  1. Ground coriander seeds

  1. Chilli powder/chilli flakes

  1. Paprika

Extra, Following would be nice to have. Grind both fresh, the difference in flavours is amazing.

  1. Cumin powder, made fresh from seeds, as well as made from dry-roasted seeds.

  1. Garam masala. Make your own (recipe on my website), the difference is amazing. Some dishes use whole, generally added to hot oil at the beginning of the recipe. Most dishes say sprinkle at the end and close lid, so flavours can develop and infuse.

If you have these things, you can make almost all Indian dishes.

Seasonal fruits are at their best right now. So how about making a refreshing fruit chat today? Fruit Chat

To spice it up a little more and to add crunch, sprinkle a handful of Besan-Sev or other similar Indian snack mix on top. These are usually bought ready-made these days, but you can attempt to make your own, if you have a vermicelli maker. I must admit, I haven't made them in years!

Water Melon Juice!

We are at the height of summer here in UK and it has been quite hot. On such days, what could be better than a glass of chilled watermelon juice, either as it is or in India style, with a little chat masala added to it. Follow the link on recipe of the week above.

Launching the Keema Sutra!

Mamta's Kitchen are very proud to announce Mamta's role as ambassador for the new Simply Beef and Lamb campaign, the Keema Sutra.

As one of two 'keema nans', Mamta wants to remind everyone how tasty and affordable lamb is, especially lamb mince. The keema nans want to encourage you to try one or more of the campaign recipes. The Keema Sutra campaign flipbook shares ten fantastic keema recipes, two of which are from Mamta, and lots of handy cooking tips too.

When you buy meat, it's really worth buying the best you can afford. The lamb we produce in Britain is excellent. When you go shopping for lamb, look out for schemes such as the Red Tractor Mark which makes sure that rules about food safety, animal welfare, traceability and environmental impact are followed, and the Quality Standard Mark, which lets us know that all products displaying the logo meets very high quality standards.

Summer is here!

Summer is finally here, well nearly! We will of course have random cold days, but gardens are beginning to bloom. Keep an eye out for summer products, both vegetarian and non-vegetarian. Then look for a recipe to match on this website. If you can't find one, ask me via the contact link above or on mamtaskitchen facebook page; Facebook page.
