For meat lovers this cannot be missed. IN UK people cook it as "tripe".

BUT I cook it asian style.

First cut the tummy (lets say 1 kg) in 1 inch pieces and dip it to the boiling water (with 2 spoons salt and a pinch of turmeric powder) for 5 minutes, wash it with cold water (this might smell...so turn exhaust fans on).

In a pressure cooker brown some chopped onions (2) and chopped garlic and ginger (one spoon each)then add some garam masala (1 spoon)and salt to taste, also add half spoon of amchur. NOw add the pieces of meat in the cooker and stir fry it for 3 - 4 minutes. Put the lid on the cooker and let it whistle 15 times (in my cooker)....check on yours (it might differ). After it is cooked just add lemon juice and sprinkle with chaat masala ..and it is ready.

No addition of water is necessary in the cooker...just take out washed meat from the bowl... gently squeeze excess water and pop it in the p.cooker.

This meat is mostly muscles and hardly any fat hence requires more cooking time.

I think the bit that has put me off is the 'put the exhaust fans on cos it will smell when washing in cold water'.

UGHH!!!!!! I used to think the same way about goat/sheep tummy initially...but when i tried it...it was not bad at all, and very good compliment as "biting" with drinks or without.

Please do not confuse it with TRIPE as that is cooked differently. Cook it the Indian style as mentioned earlier(as it is pure muscles...needs more pressure in the cooker than normal meat).

As regards smell, it is not that bad at all, only initially when you boil it. But when you start cooking it with garlic, ginger and masalas.etc...the smell vanishes.

And as Regards having a sensitive nose, my nephew and niece hate curry and its smell....people have their own choices....and i have no cure for it.
