May I just say how fantastic this site is. I have been searching for a good site for over 6 months and this is by far the best I have come across, albeit by accident.

I was just wondering what everyones favourite recipes or dishes are. I will be cooking for 8 people on Saturday and am looking for ideas for starters, mains, desserts, breads. Basically I want to do a rather elaborate spread.

Any help would be appreciated.

I love the samosas, the jalfrezi, in fact many many of the recipes I've tried even the basic naan bread was well above what I'd expected...

You can adjust the amount of chillies if there arent any hot food lovers coming. It would be beautiful as a mild dish also.

I don't see why not, with minor changes to the recipe. It should work for fish/prawns as well;

  1. Dry roast ingredients marked * in a wok or in a microwave, adding chillies only towards the end. Chillies burn quickly and become bitter.

  1. Heat oil in a pan and fry onion slices, until deep brown. Take out onto a greased paper. Leave oil in the pan.

  1. Place ginger, garlic, fried onions, chilli powder, turmeric, salt, roasted whole spices * and vinegar in a blender and make a fine puree. If necessary, add a little water or more vinegar to make a paste.

  1. Heat 1 tbs. oil in a pan, add mustard seeds and curry leaves.

  1. When seeds splutter, add the spice paste and stir-fry until oil comes off the edges.

  1. Add potatoes/vegetable of choice stir to mix and simmer until vegetable is cooked.

  1. You will need to stir it from time to time and add water if it becomes too dry.

  1. Garnish it with fresh coriander leaves.

  1. Serve with boiled rice and yoghurt. Yoghurt is to cool down your mouth!

  1. If you want it fiery hot, add more chillies and black pepper than given in this recipe.

If it comes out well, write to me, I will add it to the site. If you can take any picture of the procedure, that will be even better. In fact, we welcome and good quality pictures of recipes cooked from this site. Some of the pictures here have been contributed by readers.
