I don't know if the UK beetroot leaves are wetter than ours here in Australia, but despite finely shredding the leaves, salting and eventually belting the heck out of them with a wooden spoon, I still ended up using only about half of the besan and a bit of water as well. I used only half an onion, and possibly our onions are a bit drier too? It has been a very hot, dry end of winter.

As I eat a lot of veggies (though by no means a vegetarian), a lot of my repertoire seems over the years to have tended towards Indian. Your site is so well laid out and so accessible, I have been having a great time wandering around it. And I thought I was the only person who ate the tops of radishes!

Vegetable varieties differ, their moisture contents differ and you have to adjust the recipes accordingly, as you did. I am glad they were nice. I love vegetables too and haven't yet found one that I do not like.

I've started skimming the older threads and the information there is pretty amazing, too. How awful about losing all your earlier posts.

My mother's best friend was raised in Sri Lanka. When I saw her last night I gave her the address. I'm sure she will enjoy your fine site as much as I do.
