What to do with pumpkins?

Think of it as any other vegetable that cooks fast and use that recipe. Think of cooking it with a south Indian style Tarka with some desiccated or cream coconut added. My most favourite is Pumpkin Bhaji (Dry Curry), Gupta Family Style served with freshly made Poories, often spelt as Puree in Indian/Pakistani/Bangladeshi restaurants in UK.
