I'm growing pumpkins in my garden this year, just for something a little different, but i have no idea what to do with them once they're ready for harvest. Are there any popular Indian/Asian recipes for pumpkins as a savoury dish?
If you put Pumpkin in the search window of this site, it will give you recipes for pumpkin, pumpkin seeds and dishes where it is used in small quantities. I know some Muslim friends who add it to meat curries.
Think of it as any other vegetable that cooks fast and use that recipe. Think of cooking it with a south Indian style Tarka with some desiccated or cream coconut added. My most favourite is Pumpkin Bhaji (Dry Curry), Gupta Family Style served with freshly made Poories, often spelt as Puree in Indian/Pakistani/Bangladeshi restaurants in UK.
