your advice appreciated as to whether I can use soya milk to make paneer cheese?
Dairy products are not allowed in my diet for the moment and cheese is greatly missed.
What does paneer cheese taste like?

I would use extra-firm tofu, and drain it, and press out as much liquid as possible. Paneer has a milky flavour, whilst tofu has a chalky, soy flavour -- but in a spicy sauce the difference wouldn't be obvious.
