As far as I have understood the recipe of mango kulfi the egg added is uncooked .I can never eat it nor I can serve it to my family uncooked egg is full of bacteria and someone can fall sick so please be aware.
This perhaps depends on whicb country you are in.
In the UK it's widely accepted that pregnant women, young children and those who with fragile health should avoid raw eggs because of the salmonella risk (which is minimal in any case) BUT everyone else with normal immune systems should be fine.
The quality og eggs sold in UK is high.
If you are worried about quality of eggs sold in your locality you must of course take this into account when you select recipes from any source.
I believe but have never bothered to look it up (it was once mentioned a cookery show I was watching) that in UK if the eggs have the Lion Mark they are free of salmonella...
But I can't be sure (many things use raw eggs and no one thinks about it... mayonnaise can be made with just blending oil and egg without any cooking for example)
