I,m in U.K. Please tell me can we use English Carrots for this pickle. How to Dry thease vegetables in this country where we don't get enough sun . Please help me.

if you look at the recipe it actually gives you the information you require -
"In cold countries like UK, leave in a warm room for at least 24 hours. A hot conservatory or a sunny window sill is also a good place for this" a little further down."
and a dare say a very low oven for a few hours would do it
