It is omitted when to add tomatoes. I feel after the yoghurt mixture i. e. in the end. That will give red look here and there.

I have edited the recipe to make it clearer, which is from my sister in-law in Delhi. It is cooked in a slightly different way than the traditional onion-tomato bhajies.
