I've decided to do a pheasant leg in what Madhur Jaffrey calls a Chettinad recipe.
She seems to be saying that there is a distinct Chettinad cookery. Is that right?
The Chettiars are a caste, not an ethnic grouping, right?
I don't understand why the Tamils are described on Wikipedia as an ethnic grouping. Surely the only real ethnic distinction is between the Indo-European peoples of the North and the Dravidian peoples of the South (laying aside Sri Lanka).
But I've probably got it all wrong...
