I've been reading this forum for a few months now, and I've tried countless amounts of recipes ? all of which were just great.
I would just like to say thanks to Mamta for all her hard work and her recipes. If you're a Mamta fan then you should respond to this thread and add your gratitude.

I'm a complete hoarder of cookery books but recently realised my little Indian selection have been gathering dust since I discovered this website. It is always my first (and usually only) port of call and not just for Indian recipes. Also where else can you get such swift and considered replies from the author to any questions?
Mamta encourages us to experiment, and I do improvise when missing or cannot find ingredients, but when it comes to her recipes I'd use the adage 'if it ain't broken don't try and fix it.'

Half the fun of cooking, as far as I am concerned, is experimenting. I have absolutely no problem with people experimenting with my recipes. I like to explain how to make a dish properly, because I remember how difficult it was in my early life when i had to follow a badly explained recipe. That is all!
If you really think about it, most recipes are not really anybody's, they are just floating around in the world, and people like me who like to experiment with them, chop and change them all the time. If they belonged to anyone, how would Delia call 'how to boil an egg' her recipe? Most of the dishes we make, in any type of cuisine, have been around for ever!

I think my recipe for left over mash potato, mushy peas, stuffings and cheese sandwiches is probably unique to me !... LOL
Again I can only agree, this site has to be one of the most useful on the internet ! Most of us have stumbled across it while googling some recipe or technique and have been hooked ever since! Not only has Mamta added an incredible amount of her own recipes but has also allowed the site to expand in all directions with foods from many other countries. This combined with the back scenes work Kavay and Pete do makes the site user friendly and a constant source of new information ! New improvements to keep it running well, all the photos that are being added, tweaks and additions mean its only getting better and better !

I would like to echo the sentiments that praise Mamta's efforts. They are tremendous, not least in the way she answers anyones questions in a friendly and honest way.
Personally, I don't like changing recipes, I look at them as they are, and assess them without change. If the results aren't good (I'm talking about other recipes, not Mamta's) I move on. It is apparent some recipes don't work, and one infers that the author has not done a good job, but Mamta's recipes do work, it is obvious she is a good cook.
Lastly, about calling recipes your own. Copyright law, as it stands, says that a recipe is divided into two parts, the list of ingredients and the method. It says that the list of ingredients cannot be copyrighted, but that the method can (and is, by implication). So copying the list of ingredients is not against the copyright, and neither is the method if you write about it in your own way and style. As has been said by Mamta, who's recipe is it, anyway? We are not born with the knowledge, and unless we come up with something completely new, all other recipes are variations on old themes.
Lapis beat me to it in terms of defining copyright as it applies to recipes!
BTW Can we also say a word of thanks to AskCy who not only contributes recipes and photos, as do several of our regulars, but also helps us moderate the forums and keep them clear of spam! Thanks Steve!

Thanks to your recipes, I now turn out Indian food that rivals my Sikh boyfriend's own mother's food. In fact, I got the immense compliment of "best matar paneer EVER" on Monday, which I owe entirely to you. Indian restaurant food in Toronto is not really worth mentioning, so going the home-cooked route is definitely best. Tonight is butter chicken or keema night - haven't quite decided yet.
So anyway, thank you, thank you, thank you for your fantastic site!
