Today I have a question. I can buy fresh curry leaves from a shop in Cambridge, and I try to use fresh, rather than dry from another shop, whenever I can because they have much better flavour. The last time I bought them they came in a pack of about 100g, which was larger than usual though their usual pack is also larger than I can use up before they go brown. So my question is, what should I do to maximise their life or use them up faster? Most recipes only call for a few sprigs. There are only two people in my household (and our cats don't like spicy food! ) so cooking in huge quantities is not an option for me. Thanks for your help in advance, I'm sure you have the answer. And thanks for ever for your wonderful and endless list of recipes. I really love your site.

You can place the leaves in a sealed plastic bag and freeze them. They will last a few months this way. Every time you need them, get a few out and use them directly.

I love fresh curry leaves :o) I store them in the freezer and they last for a long time. I've stored them for up to a year and they still had a great flavour!
You can also dry them off in a pan on slow fire, powder them in mixer and store. Also works as a good masala for potatoes and such. Alternatively, fry powdered curry leaves in oil with cumin, green chillies or red chillie powder to taste and a bit of salt. Keeps well and makes a favourful addition to most dishes.
