Hi there Mamta

Yes all the boys are well. The twins will be three this month! How time flys. Youll also be glad to know that 3 out of the 4 now like my indian dishes. Mild of course. Butter chicken is their favourite. I still make the rolled parathas with vegemite and grated cheese filling...oh and the twins love any left over "lompons" (poppodoms) the next day with breakfast!!

Take care

Cheers

Steve

Vegemite and grated cheese, interesting. Children of discerning taste!

Sri Lankan chicken and butter chicken are my favourites too. The cashew paste in butter chicken and fennel seed powder and lime/lemon rind and coconut milk are signatures of SL Chicken.

Not to mention tandoori chicken, lamb curry (nani maya's?), lamb do piaza....and the list goes on. I have yet to try whole led of lamb (tandoori).

Whole leg of Lamb is my girls favourite, we sometimes have it for Christmas.

I did a video of the whole leg of lamb... if anyone wants to see I'll get the link.

Blimey, Steve: that's hard work with those young kids!

But well done on getting them to share that Indian food!

We've found that our kids were relatively open to many things, pre-puberty, but have rejected them now that they are teenagers: mussels are an example.

On the other hand, we're getting them to share an increasingly large range of other dishes with us, which is nice.

These include Mamta's 'Mum's Curry', which just goes to show that a Gupta family dish can become a shared dish for a Belgian/Scottish couple whose kids have been raised in France!

Thanks, Mamta!

Cheers

You are most welcome Phil. You can teach me some of your favourites too now, especially seafood and vegetarian specialities :-)

I do tons of vegetarian things Mamta, but often not because they're vegetarian, but just cos they're good. I think my fave right now is Simon Hopkinson's braised fennel with grated parmesan.

Sounds good Phil. I never remember to buy fennel!

Hi Mamta

From that Fuschia Dunlop 'Every Grain of Rice' book, discussed on Wildfood, I did her vegetarian version of Kung Pao Chicken (for my veggie son-in-law), and also, recently, her steamed pumpkin with black bean sauce: good stuff!

Lots more veggie dishes to try over the summer months! But the BBQ is a prob for veggie food, I find. Any suggestions?

Cheers

Hello Phil

What did she use as the replacement for chicken?

Hi Mamta

What can I use instead of curry leaves. Can't find any in my Supermarket.

Many thanks

Make it without curry leaves Jill, there is no substitute. It will be only slightly different, but still pretty good. You can add a tiny bit extra mustard seeds to give the southern flavour a boost.
