Make up a batch of mashed potatoes or you can use instant potatoes, but make them on the dry side. Set aside. Make up a batch of chickpea chutney by first putting a 15-16 oz. can of chickpeas and half of its liquid into a food processor. Add 4-6 green chilies and puree. Set aside. In a large frying pan put 3 Table. oil, 1 tsp. black mustard seeds, 1 tsp. split white urad dal, 1/2 tsp. cumin seeds and 1 large dash methi (fenugreek) seeds. Heat over high heat and when the mustard seeds have popped a bit and when the urad dal has browned, add 1/8 tsp. hing and 1/4 tsp. minced garlic. Stir. Reduce heat to medium-low. Add the pureed chickpeas, salt to taste and 1/4 tsp. tamerind concentrate (tamcon) and mix well. Turn off heat and stir in chopped fresh cilantro. To make the stuffed patties: make a small potato pattie. Put some chutney on top of the pattie and cover with another potato pattie. Seal edges. Fry over medium heat in a nonstick frying pan using very little oil. Brown on both sides.

This is more of a southern style of dish. You can also make it up with a northern style chutney, a spicy mushroom filling or a spicy pea filling. Some vegetable curries can also be put in the middle, just make sure that the vegetable pieces are very small.
