Take any fish mousse recipe and play with the ingredients. They are quite easy to make.

Most of the classic savoury mousses (eg ham, fish, shellfish, asparagus) originate from French cooking so that may be a good place to start. On the 'Great British Menu' Atur Kochar made a 'spicy salmon mousse' simply by the addition of a little garam masala.
