Don't wash it and certainly don't cook it before trying to make the skewers up !

If you are using wooden skewers you may want to soak them in water to stop them burning - but do this before you put anything on them.

You may want to use wet hands while shaping the meat on the skewers so your hands don't stick to the mixture.

The meat always seems to stay together much better if its very cold and you work quickly to avoid it warming up.

If you cook the meat before adding it to the mixture you have effectively sealed it and will stop it binding to itself and other things - and if you add it hot you will be cooking the egg so it won't be able to bind either !
