as understand it, saag really means 'greens', whereas palak really means spinach. In the London markets, if you ask for saag, you don't get spinach, but mustard greens/turnip tops.

Yeap, saag means any leafy vegetable. In Hindi, you would prefix it with the name of what saag it is, like Palak (spinach) ka Saag, Sarson (mustard leaves) ka saag and so on.
