Would this lamb rogan josh recipe work with beef do you think?

I am looking for a mild beef curry recipe (something with little to no chilli).

I think it would, yes, though take care on which cut of meat you choose as of course, some beef cuts work well for long, slow cooking and others for short, hot cooking.

Many lamb curry recipes can and are made with beef, but as Hindus don't eat beef, you will come across lamb (and mutton, goat etc) used much more often.
