Really clear, Kavey. I think i'll have a go. Although fresh spinache leaves are readily available here in the south of France, we tend to use frozen spinach in Indian dishes. I guess that wouldn't work here, unless we stuck the frozen spinach cubes in boiling water first.

I'm thinking ribbons of very thin courgette (mandolin thin) would work well. Or you could use longstem broccoli but boil it to just under, before adding.
