I'm going to try Heston's recipe idea of producing puffed up rice from basmati rice because allergy daughter is intolerant to corn and trying to find a tasty alternative to popcorn.

When I did a quick search before on the net it came up with Indian recipes for puffed rice - so I wonder if this is common food in India, puffed spiced rice?

You can heat a couple of teaspoons of oil in a pan, add 1/4 tsp. of turmeric and if she likes, a little chillipowder. Then add the murmara packetr and keep stiring on medium heat for a few minutes, until salt, turmeric and chilli powder are evenly distributed. Other dry things to add can be garlic granules, not sure if they have any wheat in them. You can also add a couple of handfuls of dry roasted and lightly salted peanuts to this mix.

Sometimes, poha, the flattened rice;http://www.spicesofindia.co.uk/acatalog/Indian-Food-TRS-Rice-Flake-Medium-Pawa.html#aRFG031_2dp , is incorrectly described as puffed rice. They are two different things. This is used quite often to make a Bombay mix type of snack called Chiwda or Chiwra.

Poha can also be cooked as a rice dish (also called poha), I have 2 recipes on this site.

I am not sure which one Heston was making?

PS Puffed rice or mamra can be eaten as it is, like popcorn. Poha or flattened rice has to be cooked before you eat it.

I have to make it myself and I'm going to try and do a sweet version for her. Wheat is not a problem it's maize/corn that she's intolerant to.

Heston just part-boils basmati rice and then dries it out in the oven having tossed it in spices first and then deep fries it for the puff effect.

This snack is very popular with school children in india, or at least it was when we were young. We called it Layya-patti.

hi Mamta...had a look at your link and no it's not for puffed rice ball shapes just puffed rice in it's separate grains like popcorn only instead of making savoury like Heston recipe i'm going to try it sweet.
