I have glut of home grown chillis of different varieties and was wondering if you knew of a method were I can stuff the chillis with various fillings and then pickle them so that they can be kept for a long period of time ( a bit like your lemon pickle ) as I have so many of them. I like the idea of stuffing them before they are preserved so all the flavours can mingle together over time.
