Following on from the preserving coriander topic. I will be pulling out my spinach on the weekend. I plan to wash, chop off stalks (and discard in the compost bin), blend the leaves in a processor, weigh out into 250gm lots and put in lip lock plastic bags and then into the freezer. Sound OK? Anything I might do differently?

Afraid I am still of the tradition of briefly blanching spinach, literally for one minute before plunging into iced water, then patting dry with kitchen towel and freezing in suitable containers or freezer bags.
Top tip? Harvest the spinach early in the morning before the sun gets to it and it goes limp!

I just steam the washed leaves in a microwave steamer, just to wilt them, and then freeze in plastic bags, without adding any water. It works well. this way, I can have whole leaves if I want or just blend it that is what is needed.
