thought I would do a salad yesterday for tea, so I bought some frozen prawns, a couple avocados and a tin of butter beans.
I thawed the prawns, and gutted then thoroughly. Then poured fresh lime juice over them. Then set about making a salad dressing, with fresh ginger, limes, two scotch bonnet chillies, mint, coriander and some passion fruit juice. Macerated all of this, and let it stand, time taken, half an hour. Passed the marinade through a fine sieve, and added salt and some oil (1:1). It tasted wonderful, so I boiled a couple eggs, opened the beans, and peeled and chopped the pears, covering them in lime juice too.
I then wondered what the prawns would taste like, so popped one in my mouth. Strange taste, rather bland, not the usual prawn flavour. Then it dawned on me, yep, the prawns were raw! It said so on the packet, but they were pinkish. I should have realized because I spent some time thoroughly gutting and washing them, but there you go. Senior moment.
That was about tea time yesterday, and I've been expecting 'problems' all day, not wanting to go and give blood, just in case! So far so good!
normally I would agree, but I was only doing a water based marinade (before adding oil) so that the idea was to capture the flavour rather than the heat. It worked very well, not too hot at all.
What a combination Lapis, bad prawns and two scotch bonnet chillies! LOL!
