Hi, I'm making 4 types of curry for a dinner party next week. A beef and aubergine curry but substituting potoes for aubergine, what type of potatoes are best to use?

Good question. I use whatever type I have at the time, which usually means King Edwards or Maris Piper or Charlotte. In India, potatoes were never named when I grew up. So I just get whatever looks good and is s good price.
