Just made some more pitta bread and this time to add a little extra I put in a couple of heaped tablespoons of Tahini (seasame seed paste) to give it more flavour...worked very well.

Why not, anything can be added, within reasons. You might actually sell the idea to some industrial Pitta bread makers! LOL!!
Give me the exact details of how, I will add it to your recipe.
