I am going on a Teambuilding course from work soon and one of our tasks is to prepare a picnic lunch for 1 however, you prepare the lunch for a colleague rather than yourself. At this point I'm not sure who I am due to prepare for hence unaware of any likes/dislikes - can you suggest some ideas that may be a little more creative than the usual sandwich? I am vegetarian so preparing anything with meat will be out of the question - just to add to my woes!!!

Thanks in anticipation

No traditional Indian picnic will be complete without Potato bhaji and Poories. Bith can be eaten cold.

Other things can be;

Paneer Malai kebabs. Can be eaten cold

or

Samosa sausage rolls.

Salad of choice

A thermos of cool Cool Lassi.

You can take a small tub of fresh mangoes too.

Sounds like "tiffin" time ...

If you don't know who its for you might want to cover all base's with some spicy, some fairly plain etc... (I do hope they have asked about any special dietry needs, like yourself being vegetarian, what if someone just makes chicken sandwiches for you ???)

I wonder how this went?

Since this talk of tiffin I've seen alsorts about it including a very posh restuarant who have had made some special tiffin like serving dishes for their diners to enjoy a more authentic way of eating.

Imagine something like 4 bowls on top of each other but all fastened to a post at the back, so each bowl can swing from side to side allowing you to get to the food in it. Now imagine its fancy and you are surrounded by a nice restuarant doing well cooked Indian food...

We went on a picnic last week and I made carrot Riata and a carrot salad - both Mamtas reciptes and they were lovely with packets of papadams (like crisps). The only thing being though is add the natural yoghurt when ready to eat and not before you go as it got a bit gloopy.

It was lovely though.

Thanks,

That is a very good point Fiona.

I had forgotten another thing my mum taught me; don't add salt too long before eating, it makes the yoghurt go 'tart'. I don't know how, but it does.
