Pickled Cheese ?

Can you pickle cheese?

I know you can get feta cheese cubes in oil and lemon juice (with oregano, pepper, salt etc for greek style salads) but wondered if just being in vinegar would turn it to mush or not ?

Things that might work pickled together -

cheese and onions -

cheese and chili -

cheese and beetroot (turning the cheese pink?) -

cheese and red cabbage (again changing the color) -

what about adding different herbs to just pickled cheese to give it a boost...

cheese and basil !! (wonder if the basil would go funny)

pickled smoked cheese.....

need some more vinegar... must try some of these...
