This recipe is used for pickling seasonal vegetables, pickle lasting good 6-8 months, provided that there is no water on vegetables. Any vegetables that need to be boiled/blanched, should be drained and then left out in the sun or over night to dry off water.
Could you 'air dry' the in a low oven if the weather/area isn't any good for drying them outside ?

If it happens to be on one of those days when you have nothing to do, you could use a hair dryer and dry them one at a time. :oD
