I watched a guy cook my paratha at a local desi takeaway cafe, the first time I'd seen someone cook one in front of my eyes. It looked so simple so I thought I'd be able to it no probs. I am cabable of cooking complex dishes, italian food and classic indian curries. But, I cannot make paratha.

To make 2 paratha I use 1/2 cup of whole meal flour.

Add some water to the flour and add some salt

Knead the dough for a bit, wrap then put in fridge for 30 mins or so.

Then knead again and then roll out with some plain flour. Then add pure vegetable ghee, fold, add ghee, fold add ghee. And then roll out to something that resembles a circle. More like an octagon!

Then i get my tava, and cook paratha without oil, butter or ghee on low heat, once the paratha is browing slightly I add my pure vegetable ghee and cook it till browned.

It turns out rubbish.

I found that adding the ghee near the end of cooking makes the paratha really hard.

I am not sure what I am doing wrong..obviosuly something. Hopefully someone will shed light on the main factor that I am missing out!

Have you tried any of our recipes?

It's almost impossible to comment on what may or may not be going wrong if the recipe is not one we use ourselves.

To find our paratha recipes use the Search function (button at top of page).

Pick one that appeals and have a go.

If you're still not getting the results you like come back, let us know which recipe and what the problem is and we can make some suggestions.

The quantity for plain flour to wholemeal flour is a nice tip.

I had found out what I was doing wrong as far as making the paratha tough is concerned: I had been cooking them too slow on low heat.

I had just made one just now and it was pretty good. I am going to try the lachcha paratha next, or at least try making them with milk instead of water. Will see how that goes....

Every one I make is getting better....so with your help I should be able to get it to just how I like them! Thanks for your replies.
