So we are looking at a predominately bread and meat eating cuisine - nan, chapatis etc. to scoop up the three "K's" of kormas, kebabs and kofti. (With lamb generally the preferred meat.)

As you were to travel eastwards across India and into Bangladesh (a very long journey!) fish and rice start to take predominance.

Afraid I can't recommend any particular cookery books, despite being an avid collector. I only own three 'Indian' cookery books - a Madhur Jaffery (a beautifully written & illustrated travelogue) - a Das Sreedharan book (great for Keralan recipes) but best a signed ring-binder (by Mamta) of printed recipes from this site from all over the continent and beyond!
