Look at this recipe; Lemon Pickle - Oil Free (Preserved Lemons), Traditional Method.
For sweet and sour, read notes. Sugar should be added only after lemons have matured, otherwise it stops from maturing lemons.
I live not too far from London and a sunny window sill is usually enough. I usually make the pickles in summer, but there is still plenty of sun, if you hurry!
Mouth watering...... makes me feel nostalic when my mother made those lovely mango , carrot, radish, kohl rabi, lemon etc. achars and keep them out in the sun in those special heavy glass jars normally coloured brown and white.
