Indian ground mustard is usually made from whole, brown/black mustard seeds, with the husk is left in. Most people grind their own, as and when needed. iIt is only recently that it has become available ready ground in India. Western, 'made' mustard comes from different seeds in different countries, including white/lighter mustard seeds and may have husk removed. I am sure Coleman's type has colouring or turmeric added to it.
