I have made millet (and corn) breads recently, but not from pure flours. I used 1 part millet/corn to 3 parts wheat flour because of lack of gluten in it. I had to leave it a little longer than for you would for white bread dough to rise to double. Someone called Paul at the BBC message boards had helped me.

It was a little heavier than wheat flour bread but tasty. I thought I had the recipe somewhere, but can't find it right now. If you make it and it comes out well, let me have your amounts and what you had to do. I will then add it to the site. Both millet and corn breads are quite tasty.
